How to Make Lou Corona's Coconut Almond Yogurt

Ingredients

  • 1 cup raw almonds
  • Filtered water for soaking
  • 1½ cups fresh young Thai coconut meat
  • Fresh coconut water
  • ½ teaspoon LiyfBiotic
  • 2 tablespoons Liyf Essentials (optional, following Lou Corona's original recipe)

Method

Step 1 – Activate the Almonds

Place the raw almonds into filtered water and soak for 24 hours.

For best results, rinse the almonds thoroughly and replace the soaking water several times during the 24-hour period before blending.

Step 2 – Blend

Add the activated almonds, fresh young coconut meat, coconut water and LiyfBiotic to a high-speed blender.

Blend until completely smooth.

Step 3 – Strain

Strain the mixture through a fine nut milk bag or fine mesh strainer to remove any remaining almond skins or coconut fibres.

Step 4 – Culture

Pour into a clean glass container.

Cover loosely with a paper towel and allow the mixture to ferment:

  • Around 3 hours on a warm day
  • Around 4–6 hours on cooler days

Once cultured, refrigerate before serving. The flavour will become slightly tangier over the next few days as the culture continues to develop.
